Located on Tasmania’s stunningly rugged East Coast, this restaurant experience celebrates two iconic east Coast Tasmanian products: Oysters and Champagne and the daily rituals around their production and consumption. 

The site offers guests a truly Tasmanian experience and a vantage point from which to survey the Freycinet Peninsula beyond, a region famous for its oyster production.

Embracing the original farm cottages latent character, the priority is to preserve viable existing structures through adaptive re-use, before grafting on contemporary verandah-like architecture.
